In 2019, Bennett named Hugh Allen the executive chef of Vue de Monde. The pair worked closely to showcase a menu informed by native Australian ingredients. This collaboration championed the art and theatre that is true to dining at Vue de Monde, highlighting it as equal parts meal and experience.

Vue de Monde was established in Melbourne in 2005 by Chef and Owner Shannon Bennett, and has achieved international recognition in the hospitality scene.
